Yummy Tummy Tuesdays – Kale and Calabash!

Bottle gourd kale curry – This is a quick to prepare, light, nutritious dish
Kale– I discovered the flavors of kale
recently and so am glad I did. Kale is a nutrition powerhouse and the best part of it is – the kids seem to love it wherever I use it (in pastas, curries, rice items, and more!). Why did I take so long to bring kale into my household? Well, I am not a fan of seaweed and for some reason every time I saw
photos of kale initially, it
always was crispy kale and that reminded me of seaweed. So I never felt I should
look for kale in the grocery stores. Recently, however, I decided to try it
out. I got some frozen kale and added it to my pasta and that was great! Then I
tried it out as part of an Indian curry and we all loved it. I have since used
it many ways, many cuisines but today, I bring you bottle gourd kale curry.
Bottle gourd.- This vegetable is a very popular vegetable in Indian cooking. We use it to make simple curries, kootu (vegetables, lentils,  and a ground paste with spices and coconut), as well as sweets sometimes! Per wikipedia, the bottle gourd or calabash was one of the first cultivated plants in the world, grown
not primarily for food, but for use as a water container.(which was the reason for the name bottle gourd).
What you need:
Bottle gourd – 1 big sized – chopped
Kale – frozen – about 1 cup
Oil – 2 tsp
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Red chili powder –– ½ tsp or to taste
Turmeric powder – ½ tsp
Coriander powder – ½ tsp
Salt – to taste
How to make it:
Heat the oil. Add mustard seeds and urad dal. Once the seeds
start popping, add the powders, and add the kale and the chopped bottle gourd. Add about 2 tbspns
of water to help cook. Cover and cook on reduced heat until done (for about 10
minutes).

  1. I am visiting from NaBloPoMo, and this recipe sounds wonderful. I was wondering if it works to use other lentils, I have red, yellow and brown lentils, but not the ones listed.
