Here is a recipe for a yummy, filling and healthy snack that is easy to make as well. And there is still time to enter the giveaway on my blog for a yummy vegan desserts book here.
1 slice of bread – toast well and crumble it to bread crumbs
4 small or 2 medium potatoes
1 carrot
Few green beans (4-5)
½ cup peas
Salt
Red chili powder
Chaat masala and/or amchur powder
Dhaniya (coriander) powder
Coriander leaves
Spinach or kale or other greens – ½ cup cooked (I used frozen)Boil the carrot, potatoes, beans, peas until soft. Put them in a food processor, add the greens and the powders along with the coriander leaves and grind for a couple of minutes. It does not have to become a puree just mixed well together and mashed a little (or you can mash by hand).
Now take the mix little by little, pat into a patty shape, roll it on the breadcrumbs to coat the patty with the crumbs evenly.
In a heated pan, add a little oil and fry the patty on both sides until golden brown
Serve by itself with any chutney or sauce/ketchup of choice or use as a burger patty (like I did)
